Envirotech Tasty Thursday- Frosty Apricot Salad
1 Large package of Apricot Jello
2 Small jars of Apricot baby food
12 oz. Carton of cottage cheese
9 oz. Carton of Cool Whip
Chopped Pecans (Optional)
Mix all ingredients together and chill well. Garnish with pecan halves.

Envirotech’s Tasty Thursday-Blue Cheese Herb Spread
2- Tablespoons Walnuts
2- Tablespoons Chopped Fresh Parsley
2- Tablespoons Chopped Chives
1/2 Cup Blue Cheese, Crumbled
1- 8oz Package Cream Cheese
Place walnuts, parsley and chives in a food processor and process until finely chopped. Place herb mixture in a small bowl and stir in blue cheese, set this aside and then place the cream cheese in a food processor and process until smooth (you can also use a hand mixer for this). Add the herb mixture to the cream cheese and mix until thoroughly blended. Serve at room temperature and refrigerate any extra.
This spread is great with crackers, on hamburgers, etc…
