Envirotech Tasty Thursday- Delicious Chocolate Chip Zucchini Brownies
These brownies are not only delicious but they are also Gluten, Egg and Dairy Free.
1/2 Cup all natural unsalted peanut butter
1/4 Cup honey or agave nectar
1/2 Cup unsweetened natural applesauce
1 Teaspoon vanilla
1/2 Cup unsweetened cocoa powder
3/4 Cup gluten free oats
1 Teaspoon baking soda
1/4 Teaspoon salt
1 1/2 Cups shredded zucchini
1/2 Cup dark chocolate chips (vegan if desired)
Preheat oven to 350 degrees. Spray 8X11 pan with nonstick cooking spray.
Place oats in blender or food processor and process until finely grounded. Set aside.
In a large bowl use an electric mixer to cream together peanut butter, applesauce, honey and vanilla until smooth. Add in zucchini, cocoa powder, ground oats, baking soda and salt. Mix well and gently fold in 1/4 cup of chocolate chips. Pour the batter into the prepared baking pan and sprinkle the remaining chocolate chips over the top. Bake for 25-30 minutes.
Cool brownies completely before cutting, we placed them in refrigerator and they are great served cold.
