Envirotech’s Tasty Thursday- Mom’s Ham and Scallop Potatoes
Salt & Pepper (for taste)
1-Cup Shredded Cheddar Cheese
2-Cans Cream of Celery Soup
1-Cup Chicken Broth (1/2 Can)

Preheat oven to 350 degrees. Peel potatoes, slice onions, cut up ham and set aside. Mix soup and broth together in a bowl and set aside.
In a 9X13 pan put a layer of ham, then a layer of potatoes. Add a little salt and pepper and then a layer of onions. Next sprinkle the cup of shredded cheese on top and then repeat the layers again.
After you have two layers of the above pour the mixture of cream of celery soup and chicken broth over the top.
Place in over at 350 degrees for 1 hour (make sure potatoes are ready at this time).

Envirotech Tasty Thursday-Spicy Grilled Wings


2 Dozen Chicken Wings
Hot ‘n Spicy Rub
1 Cup Franks Hot Pepper Sauce
One Stick Butter
1 1/2 Tablespoon White Vinegar
1 teaspoon Worcestershire Sauce
1/2 teaspoon Cayenne Pepper
1/4 teaspoon Garlic Powder


1. Place chicken wings in a gallon ziplock bag and coat with rub. Place in refrigerator overnight.

2. Combine the hot sauce, butter, vinegar, Worcestershire sauce, cayenne pepper, garlic powder and salt in a pot and place over medium heat. Bring to simmer while stirring with a whisk. As soon as the liquid begins to bubble on the sides of the pot, remove from heat, stir with the whisk and set aside for use.

3. Once cooled, pour wing sauce on wings and marinate for two or more hours.

4. Grill wings, turning often until desired char is achieved.

Envirotech Tasty Thursday-Gluten Free Copycat Wendy’s Chili

2lbs ground beef
1 (29 ounce) can tomato sauce
1 (29 ounce) can kidney beans
1 (29 ounce) can pinto beans with liquid
1 cup diced onions (1 medium onion)
½ cup diced green chili pepper (2 chilies)
¼ cup diced celery (1 stalk)
3 medium tomatoes, chopped
2-3 teaspoons cumin powder
3 tablespoons chili powder
1 ½ teaspoons black pepper
2 teaspoons salt
2 cups water

Brown the ground beef in a skillet over medium heat, drain off the fat, in a large pot combine the beef plus all the remaining ingredients and bring to a simmer over low heat. Cook, stirring every 15 minutes for 2-3 hours.
