Envirotech Tasty Thursday-Black Bean Hummus

2 C garbanzo beans-drained
2 C black beans-drained
1/3 C warm water
1/3 C olive oil
1/3 C lemon juice
4 garlic cloves
2 tsp. ground cumin
salt and pepper to taste

Smash all beans, combine all ingredients in food processor. Process until smooth. Adjust seasonings and add more lemon to taste. Refrigerate.

Envirotech Tasty Thursday-Bean Soup…HAPPY NEW YEAR!

2 Cups Bean Soup Mix (pkg. of 15 bean soup mix)
2 Quarts Water
2 Tsp Soda
1 Lb Ham, Diced
1 Large Onion, Chopped
1 Clove Garlic, Minced
1/2 to 3/4 Tsp Salt
1 16oz Can Tomatoes, Undrained & Chopped
1 10oz Can Tomatoes and Green Chilies, Undrained & Chopped

Sort and wash 2C bean mix; place in dutch oven, cover with water 2 inches above the beans. Let soak over night. Add 2 tsp soda to the soaked beans and bring to a boil, skim, drain and then add the ham, onion, clove of garlic, salt and 16oz tomatoes. Cover and bring to a boil; reduce heat and simmer 1.5 hours or until beans are tender. Add the 10oz of tomatoes and green chilies, simmer 30 minutes stirring occasionally. Yields 8 cups soup.

This is a tradition that we have each year on January 1 with our family. We eat this along with cornbread. The black eyed peas are to bring you luck in the coming year and the cornbread symbolizes Gold!
